When should I edit an existing order in CustServ?

You should edit an existing order if you are extending a free trial date or if you are adding licenses. Do NOT edit the order if the customer converts from a free trial to a paid order. In that case, you will need to create a new order for that customer and select "Conversion" as the special order type (see above FAQ).
